Another successful father and son experience.
We recently had the father and son team, Maurits and James Vermeulen, on the Basic Woodwork course. James is a very bright 9 year old who was a pleasure to teach. Even more enjoyable was to see him enjoy my wife’s special banana cookies at tea time. So for those of you who have partaken of these delectable eats here is the recipe:
Margie’s Banana Muffins
3 mashed bananas ½ t baking powder
125g butter ½ t bicarb
1 ½ cups sugar ¾ cup milk
2 eggs ¾ t vanilla essence
2 cups flour – I often use 100ml bran + 400ml flour and sometimes add 1t cinnamon or cinnamon and nutmeg.
Cream butter and sugar, beat in eggs and add mashed bananas. Mix in the flour and baking powder. Lastly add the bicarb and milk, then the vanilla essence. Spray pattypans with Spray and Cook and spoon a full tablespoon of the mixture into each. Top with ¼ walnut and bake at 180 degrees for about 15-20 minutes.
